Margarita Cupcakes

WARNING: These cupcake should not be consumed by children. ;-) 

I made these cupcakes for a friend for her birthday. They are so delicious! I had a family give me the recipe at work, but it looks like it's from the BrownEyed Baker blog. (give credit where credit is due here on the blog). 
Holy moly! If you like Tequila and lime you will love these! 

The Goods: 

The Cupcakes
1 1/2 cups all purpose floud
1 1/2 teaspoon baking powder
1/4 tsp salt
1/2 cup unsalted butter
1 cup granulated sugar
2 eggs, at room temp.
Zest and juice of 1 1/2 limes
2 tablespoons TEQUILA 
1/4 tsp vanilla
1/2 cup buttermilk

1-2 Tbsp tequila to brush tops of cupcakes with

For the Tequila Lime Frosting: 
1 cup unsalted butter, room temp
2 1/4 cups powdered sugar
1 Tbsp lime juice
2 Tbsp tequila
Pinch of coarse salt

The Directions: 

Preheat the over to 325 degrees. Line your cupcake pan with liners

In a medium bowl, whisk together flour, baking powder and salt. set aside.

In an electric mixer, on med-high speed, beat the butter and sugar together until pale, light and fluffy (about 5 minutes)

Reduce the mixer speed to medium and add the eggs one at a time, mixing thoroughly after each addition. 

Scrape the sides of the bowl and add the lime zest, lime juice and vanilla and tequila. (The mixture will start to look curdled at this point, but it will all come together!) 

Reduce the mixer speed low. Add the dry ingredients in three batches, alternating with the buttermilk in 2 batches. Mix only until just incorporated, using a rubber spatula to give it one last mix by hand. 

Divide the batter between the cupcake cups. Bake for about 25 minutes or until just slightly golden and a toothpick comes out clean. 

Allow cupcakes to cool 5-10 min. and then remove to a cooling rack. Brush the tops of the cupcakes with the tequila. Set them aside to cool completely. 

Frosting: 
whip the butter on med-high speed of an electric mixer using the whisk attachment for 5 min. Reduce the speed to med-lw and gradually add the powdered sugar, mixing and scraping the sides of the bowl until all is incorporated. Give it a mix on medium speed for about 30 seconds. Add the lime juice, tequila and salt and mix on med-high speed until incorporated and fluffy. If the frosting appears too soft, add some additional powdered sugar, one spoonful at a time until desired consistency is reached. 

Frost the cupcakes and garnish as desired.







 For the appetizer, I made some bread with olive oil, garlic salt and then put some pepperoni on some and some tomatoes on the other half and then Parmesan and mozzarella cheese and popped them under the broiler. DELICIOUS and easy snack with what I had around the apartment. haha!
