Apple Dumplings and Fall Evenings

Last night we had a couple from our church over to our place for some hot drinks and homemade Apple Dumplings.

I've never made apple dumplings before, but I was ready for the new endeavor and excited about it, yet hoping they turned out edible since I was serving them to other people.

I had found one recipe online that sounded pretty easy. But, it didn't use everything from scratch. I am in this snobby baking phase where I don't like to use mixes. I know I know... but it's just a phase I think. Once i have a full time job as a nurse I'll be praising the Lord for mixes, maybe.... Anyways, I went for the recipe in Better Homes and Garden Cookbook. My mamaw bought this for me and she LIVES by it. So, I went for it.

I began baking them before dinner because I knew they would take awhile, and create a mess of my kitchen and dining room and didn't want that when our guests arrived. So, I started making the sauce. Then, moved on to the dough. I have had the hardest time getting dough to form correctly. Every dough I have made from scratch has been a crumbly disaster. I finally figured this one out though and began rolling it out. And the disaster ensues... it would NOT stay together! It was at about this point in the process that I was ready to go to the store bakery and purchase apple dumplings already made. But I didn't give in... This dough was so frustrating to work with. But, I got it rolled, cut it into squares.

Then added the apples, walnuts, honey, and cinnamon sugar to the middle of the dumplings and ATTEMPTED to close them up and make them look pretty. A couple of them did, and a couple of them were just a hot mess. But, I figured, whatever, they will taste good nonetheless!


I put them in the pan and then gave them a nice little warm bath of cinnamon, water and butter. Put them in the oven and PRAYED they would taste good.

Our guests arrived and we drank delicious Pumpkin Spice coffee ( I got this coffee at World Market, if you have one nearby I highly suggest it!)


The finished product was DELICIOUS! I put a spoonful of Vanilla Ice cream on top and with the pumpkin spice coffee it went perfect!

We had a lovely evening with new friends!

I am so ready for the weekend ahead! I am enjoying all the weekends I have the next couple because I start work in 2 or 3 weeks and I am enjoying the rest of the free time I have while it lasts.
